長年愛されてきたおでん出汁をベースに、厳選された昆布や鰹節をじっくりと炊き出し、深みのある味わいを引き出しました。この出汁を活かした「つけ出汁」は、牛肉の旨みをさらに引き立て、口の中に広がる豊かな風味をお楽しみいただけます。

Based on the oden dashi broth that has been loved for many years, carefully selected kombu (kelp) and dried bonito flakes are slowly cooked to bring out a deep flavor. The “dipping dashi broth” that makes the most of this broth enhances the flavor of the beef even further, allowing you to enjoy the rich flavor that spreads in your mouth.

厳選された和牛は、肉質の柔らかさと上品な脂が特徴です。匠庵の「しゃぶしゃぶ」では、この和牛を、丁寧に取った出汁でいただくことで、素材本来の味を最大限に引き出します。

Carefully selected Wagyu beef is characterized by its tenderness and refined fat. In Takumian’s shabu-shabu, this wagyu is served in a carefully prepared broth that brings out the natural flavor of the ingredients to the fullest.
