About / Concept

“Shoan” is located in a back alley in Gion. Please enjoy this special dish, which is filled with the flavor of carefully selected beef and the aroma of the stock that has been carefully drawn over a long period of time.

Commitment to Dashi

Based on the oden dashi broth that has been loved for many years, carefully selected kombu (kelp) and dried bonito flakes are slowly cooked to bring out a deep flavor. The “dipping dashi broth” that makes the most of this broth enhances the flavor of the beef even further, allowing you to enjoy the rich flavor that spreads in your mouth.

Carefully selected Wagyu beef is characterized by its tenderness and refined fat. In Takumian’s shabu-shabu, this wagyu is served in a carefully prepared broth that brings out the natural flavor of the ingredients to the fullest.
